Cassava Pone is one of those special occasion desserts made around Christmas in the Caribbean. My version of this recipe is dairy-free and has a reduced amount of sugar.

Ingredients
2lbscassavapeeled and grated
1smallyampeeled and grated
1/4lbpumpkinpeeled and grated
1wholedried coconutgrated
2 + 1tspcoconut oil
1/2cupcoconut sugar
1/4cupraisinsoptional
1tspground allspice
1tspvanilla extract
1cancoconut milk400ml
pinchsea salt
Instructions
Peel the outer skin from the cassava, yam and pumpkin and remove the coconut from the shell.
Grate cassava, yam, coconut and pumpkin into a bowl.
