This simple, healthy 4 ingredient beet smoothie can be made with raw or cooked beets for nutrient-dense drink. Vegan and paleo friendly with no added sweeteners, this beet smoothie is a great way to use up leftover cooked beets.

Ingredients
1cuppeeled, cooked beetsred or golden
1/2cupcoconut milk or non-dairy milk of choice
1/2cupwater
1/4tspvanilla extract
pinchsalt
Instructions
Roughly chop beets and add to blender jar.
Add all remaining ingredients to the blender.
Blend until smooth.
Pour into a glass and enjoy!
Notes
This is a thick smoothie since whole beets are used. If you prefer a thinner consistency you can use freshly pressed beet juice instead.
The coconut milk adds a rich creaminess to this smoothie, however if you prefer you can use dairy or another non-dairy option.
